A traditional Chinese way of preparing tea


A gaiwan is a traditional Chinese method to make green tea, oolong and white tea.

It has three parts: a saucer, a bowl and a lid for the bowl.

First of all you warm the bowl in rinsing it with warm water.  Next you add the tea to the bowl and fill it with water, which has the correct temperature. Then you cover it with the lid. Once the tea is steeped, you hold the saucer with the fingers of the right hand while the thumb rests on the edge of the bowl. The left hand then holds the lid, which will retain the tea leaves. It sounds tricky, but practise makes perfect.

You can also leave the lid off or drink the tea direct from the bowl, whatever way you prefer.

The tea in the gaiwan can then be steeped again 2 or 3 times, depending on the tea.
